This program is dedicated to those who, like me, adore pasta and sauces. I was so looking forward to launching a program like this!! Pasta lovers and motivated students, during this week you will learn and make the most famous, authentic and traditional pasta shapes, accompanied with their traditional matching sauces. The week will be focusing on regional shapes, recipes and cooking methods. Tuscany, Campania, Sardinia, Liguria, Lazio, Puglia, Sicily, Emilia Romagna, Piedmont, Abruzzo… To make this experience even more authentic, we are bringing Sardinia with its ancient and challenging pasta shapes here at Toscana Saporita. How? Lucrezia will come from Sardinia to share her secrets to make Filindeu (Threads of Gold) which is the rarest pasta in the world, then Lorighiddas, Fregula, Culurgiones, Gravellus, Andarinus. Working with her will propell you back to centuries ago. It is a once in a lifetime experience. We will be working in the morning and in the afternoon, as many of these recipes require two days of work. Thursday will be dedicated to the visit of San Gimignano, the New York of the dark ages, a true gem located in the heart of Tuscany. Beautiful tower houses, great leather and linen shops, pottery, saffron! Truffle hunt and wine tasting will follow in the afternoon. On Friday afternoon we will visit the medieval walled city of Lucca, with its beautiful churches and cozy shops. The menu for the week will be richer than any other week as on top of all the dishes we normally prepare, we will celebrate pasta in all its recipes and add them to each course. Be ready for agnolotti, culurgiones, pansoti, anolini and tortellini, as well as lasagna, pappardelle, pici, fregula, gnocchi sardi and gnudi…the list is very long so please get in touch with me for more details on which pasta shapes and sauces we will be teaching.
You arrive on Sunday and are welcomed with a traditional Tuscan lunch. The remainder of the day is yours to settle in, explore the estate, swim , ride a bicycle or just relax while waiting for dinner to be served. Monday through Friday, after a continental breakfast served from 08:00AM to 09:00AM, your daily culinary adventure begins. Be ready for this unforgettable week.

Breakfast from 8:00 am to 9:00 am, then get ready for your first day of lessons.
At 1:30 pm a great lunch paired with wines will be served. You will enjoy the labor of your work plus some of our dishes. This is not the week you choose for dieting!
At 4:00 pm be ready for the second part of the lessons.
At 7:30 pm dinner and Wine tasting with a wine producer.
Breakfast from 8:00 am to 9:00 am, then get ready for your second day of lessons.

At 4:00 pm be ready for the second part of the lessons.
At 7:30 pm dinner

Breakfast from 8:00 am to 9:00 am and then get ready for a great day full of activities! After breakfast we hit the road, direction Siena. The drive is about 1 1/2 hours. San Gimignano with its towers, beautiful shops and history are waiting for us. The best gelato in the World is calling you and if we are lucky, Sergio Dondoli will be there! After the visit to the town, we meet the truffle hunter and his dog and we will spend one hour in the forest foraging truffles. After the hunt, enjoy a wine tasting with local cheese and charcuterie. Back to the school.
Dinner will be served at 7:30 pm. Alessio’s Pizza will be waiting for you!

At 1:30 pm a great lunch paired with wines will be served. You will enjoy the labor of your work plus some of our dishes. At 3.00pm ready for the visit of the Medieval walled city of Lucca, about 20 minutes far. Lucca, mostly known for its well-preserved walls and for being the city of 100 churches is a real gem that needs to be discovered. Here you will enjoy a perfectly walled small city full of little shops, beautiful churches and a Roman Amphitheater. Back to the school
